Capoverso was started in 2000 by Adriana Avignonesi della Lucilla who decided to use her former experience to create a new company able to represent her own wine philosophy.
The name chosen for the company means indent, a way of underlining a new beginning.
Capoverso's vineyards lie between Cortona and Montepulciano, on the hills that face both little towns. The vineyards cover about 11.6 ha., the density of plants varies from 6000 plants per ha in the more recent ones to 4000 plants per ha in the historical vineyard that comprises also some plants carrying white grapes.
We grow Sangiovese, Canaiolo, Merlot, Cabernet and Syrah. According to the structure of the terrain, with slopes going down that are never too steep,we use spur cordon training.
The deeper layers of the terrain contain a relevant amount of clay, very usefull during hot summers beacause of its capacity to release humidity slowly, a factor that is essential for perfect ripening of the grapes.The terrain is mostly tuffaceous with a good percentage of clay. The wines are elegant and with structure. Harvest is manual with a careful selection of the grapes before taking them to the winecellar.
The highest hill facing south has prooved to be the best for growing classical Tuscan varieties as Sangiovese and Canaiolo.
The other vineyards, facing West, are more suitable for growing renown grape varieties as Merlot, Syrah and a small part of Cabernet Sauvignon.
The remaining land is in part used for dirt roads and the rest is cultivated with typical local crops. A part is dedicated to the project of a winecellar.

Ageing and Fining Vinification in small steel vats, manual punching down, the wine is left in steel for a short period of time and than transferred into 500 l tonneaux for 8\11 month depending on the vintage.
