Ageing and Fining The wine ripes in terracotta's jars of 500 litres. The jars, made with clay from Impruneta, are 3 centimetres thick and are not glazed nor waxed. The natural porosity of terracotta cause a permanent oxygenation and his egg shape makes the wine's mass more dynamic and, in a 8 months time, bestow on the wine a perfect maturation.
