Characteristic
In the heart of Premier and Grand Cru our House is proud to own 20 hectares of the finest Pinot Noir vineyards in the territory of Mareuil, Aÿ, Mutigny and Avenay, all well exposed to the south and entered the pure craie, and of the ancient and famous varieties of "Clos des Goisses" and "the Professional".
Our winemaking are the most natural. We think that good wine should be very little interventional. The fermentation temperatures are cool, but not too low, in order to preserve natural aromatic expression. The malolactic fermentation is carried out at the end, except for very powerful wines like Clos des Goisses. Our doses are always low, so that the sugar can not mask the balance between freshness and fruitiness.
