

Carmignano is a selection of the best Sangiovese grapes 80% and 20% Cabernet Sauvignon. It is the only DOCG in Italy where one is obliged to use Cabernet Sauvignon, because thanks to the Medici, the Carmignano is made by the blend between Sangiovese and “ French grapes” which was Cabernet Sauvignon. The grapes are fermented separately in stainless steel tins at a controlled temperature, because they have different maturing period. After the Manolactic fermentation made in stainless steel , Sangiovese and Cabernet Sauvignon assembled together and set to ripen in French durmast tonneaux for a minimum period of eight months. After that it’s been bottled , our Carmignano remains another eight months in the bottles to refine .
We suggest to serve it in a red wine glass at a temperature of 18°C.
