When I and Carlo have discovered Monte Dall'Ora it was love at first sight. We created our estate and our family in this special land of great tradition in the heart of historic Valpolicella zone. Children of farmers, we took from them the tenacity to work and the love for vineyard.
The restructuring of the ancient dry-stone walls, the 'marogna', which support the terraced ground, has been a long and hard work. The fossils and petrified shells found into the rock of our soil, was for us the testimony of the evolution of the earth and the return to our origins.
We found in our hands this wild land, where years of neglect had left the trees and brambles grow. We have tried to take the vitality of this land rich in humus and microorganisms, we have planted the old forgotten varieties of grapes in the respect of their life cycle.
We live and work following the alternation of seasons, doing activities to help preserve the microbiological natural heritage which is the real wealth of our country.
This original universe is the basis of balance in our vineyard and in our winery, we love deeply Monte Dall'Ora and its treasures.
Working and maintaining the territory where we live is tha natural choice of life for us, how can we pollute the land where our children eat, play and grow?
The path with my husband is marked by argument, when we left a sure job to work into the vineyard it was a returns to our origins. Having in our hands that land abandoned but alive and dynamic has been a gift for us. The work is hard, but there is so much joy and satisfaction of enjoying the small things and to feel in harmony with nature around us.
The choice of organic certification started a few years later, our vineyards have always been treated with natural methods, nevere chemical fertilizers, neither herbicides, nor pesticides.Our geographical position with excellent exposure to sun and wind, allow us to minimize the treatments in the vineyard, made only with copper gluconate and sulfur mining. We cultivate with traditional pergola veronese which guarantees a certain shading during the warm summer.
The next step was to approach towards the methods of biodynamic agriculture, with modesty and curiosity. Our daily work is governed by the nature's strenght and times. We are aware of being subject to global influences and we try to respect its rhythms. We adopt measures in the vineyard to help preserve the fertility of the land and the developments of micro-organisms, which means that the roots of plants will find materials in the soil to be useful and strong of the attack of parasites.
Knowledge and respect for natural cycles help us to find the balance that give us a state of well being and that will benefit our whole microcosm (soil-vine-wine-man).
When you look this house, dominating the valley, it seems that on this hill has always been our home, our cellar.
Integrated into the landscape, we have desiged a structure with eco-friendly criteria, such as the use of natural materials like woods and stones extracted on this places and taking all the useful guidelines to save energy.
The orientation of the buildding at the centre of a positive plan, between two magnetic poles in ancient chosen major for their astronomical location, one the Roman Churc of San Floriano, only a couple of miles, and the other on the remains of a Roman fort (castrum) in Castelrotto. Even the cellar is affected by this beneficial planetary influence, we have specifically chosen to direct che aging cellar on this imaginary axis.
We dug the limestone to build the winery, leaving along the perimeter of an air corridor for the drainage of rainwater. The humidity is good and the temperature is constant.
The granary (fruttaio) that we use during the winter months for drying the grapes for Amarone and Recioto is located adjacent to our house, in a strategic position. There are large windows that allow air to circulate freely, we don't use any artificial method to accelerate the drying process and leave the grapes exposed to natural climate its this season. In this way the grapes can less approximately 40% of its weight because of loss of water and is subjected to a phisical and chemical transformation that give an unique bouquet and great concentration.
