

The grapes are harvested by hand. After a few hours of cold maceration, the destemmed bunches undergo a soft pressing. The must produced ferments in stainless steel tanks with selected yeasts at a controlled temperature between 12-14° C. Subsequently the wine stays in stainless steel tanks, for about 4 months on fine lees, to refine its organoleptic characteristics before being bottled.
