Abate Nero

The company in 1990 decides to start the production of sparkling wines whose permanence on the lees has increased from year to year and therefore begins to refine the selection in search of very high quality bases: the prestigious Cuvée dell'Abate reserve was born in 1994 , and in 2004 is the first vintage of the “Domini” Millesimato. Just like 1994, 2008 is also an important year for the company as, in light of the numerous awards obtained by the vintage wines, the winemaker Luciano Lunelli decides to embark on a new and very demanding challenge to produce a classic sparkling wine based on Pinot Nero as in the great French tradition: this is how the "blanc de noir" Millesimato "Domini Nero" was born, alongside, from the 2012 harvest, the Millesimato "Domini Rosé" To date, but the original character is however identical: for over forty 'years of artisan production (annual production of about 50 / 60,000 bottles), respectful of the dictates of classic sparkling wine, maximum care of each phase, starting from the choice of the yeasts and the cutting of the base cuvées, those that will allow the wine to re-ferment very slowly in the bottle and turn into Abate Nero. Patience is at home here, the wine rests on the lees for the second fermentation much longer than usual. Do not be surprised, therefore, if on the label you find dates that date back to vintages a few years ago. Each phase is manual, for a direct control of every single bottle: only in this way Abate Nero achieves its charm.
