The history of the Antica Acetaia Dodi has distant roots and has always traveled hand in hand with the noblest and most ancient Italian culinary traditions, just think that initially in the family there were masters Casari di Parmigiano Reggiano, one of the most famous among the delicacies of the noble Italian culinary tradition, known and appreciated all over the world. To tell the story of the company we have to go back to 1891, the year of Carmelina's birth. It was thanks to her arrival that the first battery of balsamic vinegar was launched for her. As per tradition, in fact, in the culture of wealthy agricultural families at the birth of the daughter, the father "started" the battery of barrels so that the balsamic vinegar "grew" together with the young woman and was ready to be brought as a dowry on the occasion of her wedding. And so it was in 1915 with Carmelina's wedding. The barrels of Riserva di Famiglia were handed down and preserved over time from then until today to symbolize how history and tradition are very important values for the company and its property and what are the efforts that every day, with great love and professionalism, are placed to make this great historical heritage consistent with the innovation and technology of our days for the production of the precious Black Gold. Balsamic Vinegar has in fact rules that are still rigorously respected and guaranteed today, where, today as then, the real protagonist of this miracle is "time". The Acetaia is the place where this miracle takes place, the place where the "aerobic" process of acetification transforms the cooked must into Balsamic Vinegar. The carefully selected barrels and barrels of fine woods represent the heart of the company, where Balsamic Vinegar is born, matures, ages and refines itself. The precious selection of woods, combined with the care dedicated to them, to the particular climatic conditions of the hills of Reggio Emilia and Modena, are the ingredients in which, thanks to the hot and dry summers and the harsh winters, the optimal conditions essential for the refinement phases of the product.
