Since then, the 19th century château has been mirrored in an ornamental pool which stretches out majestically before it. And since 2006, its silvery expanse also conceals an underground cellar, somewhat reminiscent of Jules Verne's Nautilus, with windows looking out on water and sky.
This barrel cellar puts the finishing touch to a production process in which excellence is paramount, in the finest tradition of great Pauillac wines.
Pauillac, a Médoc appellation, is located about 40 kilometres to the north of Bordeaux on the left bank of the Gironde River.
The land, which contains quaternary gravel deposits and the large pebbles and sand which are typical of the appellation, is a winemaking paradise. The subsoil composition allows rainwater to accumulate, which will then provide water for the roots, and the rolling landscape helps to improve drainage.
This exceptional terroir has a maritime climate, made milder by its proximity to the Gironde estuary. All the right conditions come together to make the Pauillac appellation the most prestigious of all Bordeaux wines.
The Pichon Baron estate's 73 hectares of very high quality gravelly soil overlook the Latour vineyard. This exceptional land, poor in nutrients and with little excess water, nourishes the old vines sparingly so that grapes are produced in small quantities but are of supreme quality.
This is a terroir that can produce the most remarkable wines; the estate has striven to do so with constancy and excellence, in line with this vineyard's early history. Château Pichon Baron, the estate's Grand Vin, is crafted using a very stringent selection from the finest terroirs, and the number of bottles produced is limited to give only the best.
Since 1994, the estate has been actively committed to protecting the environment and thereby safeguarding this exceptional heritage.
Pichon Baron's vineyard is planted 62% to Cabernet Sauvignon, 33% to Merlot, 3% to Cabernet Franc and 2% to Petit Verdot, and has been meticulously divided into separate plots. With consummate craftsmanship each plot receives specific care and attention adapted to its particular profile (soil quality and vine age and variety).
The great terroir comprising the 30-hectare plateau of Pichon Baron (one of the estate's historic plots which was already in use when the wine was first produced in 1694) is devoted entirely to production of the Grand Vin and now represents the major part of the blend.
The 14-hectare Sainte Anne terroir ensures production of Les Tourelles de Longueville, which is made using grapes from selected plots planted mostly with Merlot giving this wine its own distinctive character.
