Katà is produced from Catalanesca grapes cultivated in purity in vines at the feet of Mount Somma, at about 500 m above sea-level in the most ancient wine zone of Mount Vesuvius. Our Katà borns from very low harvest, 5-6 clusters per plant, which help to enhance the complexity, finesse and elegynce. The volcanic-sandy land gives the wine a high minerality and freshness with great personality. Grapes are selected during the pressing phase, the must is cleaned with the help of cold so that it exalts typical vineyard aromas. Katà comes after a long rening on noble lees and some rening months in bottle to express its typical characteristics during the rst months. After 2-3 years it fully expresses its volcanic force. The most classic of matchings is with seafood spaghetti or cod, it is served at a temperature of 10/11 °C.
Vinification style
manually collected grapes in small crates are brought to the winery, selected and entire clusters go into the soft press. Only the must flower is used for our Katà production. Six months in the steel tub complete its rening.
