Cantine Olivella

It is a young, dynamic company, in constant innovation that nevertheless maintains solid links with the culture and tradition of the area. The winery is located in a late 19th century peasant residence, surrounded by centuries-old olive groves and ancient vineyards, in the heart of the Castelli Romani. The soils of volcanic origin, rich in minerals, have made it an ideal place for centuries for the cultivation of vines and for the production of high quality wines, although the territory, D.O.C. Frascati, is generally known for a productive and commercial standardization. The vineyards, trained with the Guyot system, produce an average of 80 quintals of grapes per hectare, with a planting density of approximately 4500 vines. Great and greater is therefore the effort of this company to re-evaluate the local wine, starting from the recovery of the most historic vines, such as Cesanese, Malvasia del Lazio, Trebbiano Giallo, Bellone, Malvasia Puntinata. Campania is an area rich in history and traditions. The grapes of Cantine Olivella are produced in 12 hectares, pursuing the maximum biological balance.
