Donna Olimpia 1898 was an idea of Guido Folonari, heir to one of the most historical Italian wine families, who decided to develop, in 2001 an ambitious wine project. When I decided to start this adventure alone, I really decided to get up and go. What was I looking for? I did not even know myself. I was looking for a place that would thrill me. I was lucky enough to find three. So, in a short time, he found three wineries in the most prestigious production areas between Piedmont and Tuscany, which emerged in the Italian wine scenario and were immediately recognized as the three Killer B's by Guido Folonari.Tenuta Donna Olimpia 1898 features a modern cellar of 5000 m², designed in a perspective of energy saving and minimal environmental impact, in order to reduce waste and harmful emissions to the territory. The cellar is equipped with the best available manufacturing technology (automatic pumping over and temperature control, cold pre-maceration). The wine refinement takes place in French oak barrels. The barrique cellar is certainly the most important and fascinating room of the estate. In order to enhance, expand and complete the winery, the illumination is achieved entirely with LEDs. The appliances are wisely disguised in the ceiling, creating a pleasant effect of soft lighting, with different intensities depending on the needs and the time of day.
