Arunda

With its 1200 meters of height, Meltina, nestled on a quiet plateau, in an uncontaminated setting of woods and mountains, has been home to the highest Classic Method winery in Europe since 1979. The company does not have its own vineyards, but has chosen to select the three varieties, Chardonnay, Pinot Bianco and Pinot Nero, from trusted winemakers operating in different areas of South Tyrol. Grapes with different analytical and organoleptic characteristics, expressed by different soils and microclimate in the areas of Terlano, Appiano Monte, Cornaiano, and Pochi di Salorno, which allow to obtain cuvées with a great richness of expression. The management of the vineyards takes place under the control of the company and after the vinification the various wines are conducted in the Meltina cellar where all the sparkling and aging phases take place. The annual production is around 70,000 bottles, which represents 50% of the Alto Adige Classic Method sparkling wine production. The sparkling wines are made with the same technique developed three centuries ago in Champagne: a second fermentation of the wine in the bottle and a very long aging on its own yeasts, never less than 24 months, which in the special reserves reaches up to 5 years.
